Indulge in Homemade Chicken Korma: A Nutritious Delight
I grew up consuming all kinds of foods as a child, from Chinese, Thai, burger and fries, fish nโ chips to Hawaiian and Meatlovers pizza! For many years, particularly during my late teens and early twenties, I tended to avoid many of these types of foods out of fear of gaining weight. However, as soon as I was introduced to the concept of โflexible dietingโ around 2010, I discovered that I could easily fit many of these delicious meals into a healthy balanced diet.
Naturally, I began reintroducing them wherever possible. After moving to the USA and having some wonderful Indian cuisine experiences with friends, my love for Indian food was reinvigorated. I then sought out a few staple simmer sauces and some simple naan recipes to help keep this love alive. One such dish that has become a favorite in my kitchen is Chicken Korma.

Ingredients
- 500g Chicken Tenderloin or Breast
- 250g Zucchini
- 250g Yellow Summer Squash
- 20g Green Onion
- 1 Jar Journey to India โKorma Simmer Sauceโ
- Cilantro (optional)
Steps
- Prepare the Chicken: Dice the chicken into small bite-sized pieces. Spray a medium-sized non-stick frypan with oil and cook the chicken over moderate heat for 5 minutes or until cooked through.
- Prepare the Vegetables: While the chicken is cooking, dice the squash and zucchini into small pieces, along with the green onion. Add the vegetables to the frypan and cook for a further 5 minutes until they are soft in the center.
- Simmer the Sauce: Next, add your simmer sauce to the frypan and let it simmer for 10 minutes over low heat.
- Serve: Serve your Chicken Korma with rice, cauliflower rice, or a lightly sautรฉed Joseph’s Pita with a light spray of oil.
