Ingredients
- 300g Raw Pistachios
- 100g Sunflower Seeds
- 100g Sunflower Butter
- 100ml Unsweetened Almond Milk
- 225g 1/3 Less Fat Cream Cheese
- 25g Fat-Free Milk Powder
- 5g Poppy Seeds
- 2.5ml Vanilla Extract
- 25g Powdered Sucralose Sweetener
Instructions
1. Roast the Nuts: Begin by roasting the pistachios and sunflower seeds in the oven at 350ยฐF for 10 minutes, turning them halfway. This step gives the pistachio butter a delicious, toasty roasted flavor. Allow them to cool entirely before proceeding to the next step.
Note: Pistachio butter will naturally be a brown-green shade. For a more vibrant green color, remove the pistachio skins after roasting by rubbing the pistachios between a clean cloth.
2. Blend the Nuts: Next, blend the cooled pistachios and sunflower seeds in a high-speed processor or blender. Depending on the power of your blender, blend in intervals to prevent the nuts or the machine from overheating. The longer you blend, the smoother and runnier the consistency will be, as the nuts release their oils.
3. Add Sunflower Butter: Once you achieve your desired consistency (the smoother, the better!), add the sunflower butter to the blender and give a quick blitz to combine thoroughly.
4. Mix in Remaining Ingredients: Add the 1/3 less fat cream cheese, milk powder, vanilla extract, and sweetener to the mixture. Blend until smooth. Finally, stir in the poppy seeds.
5. Storage: Store your homemade pistachio butter in an airtight glass container in the fridge for up to a month, or freeze it for up to three months.
