Ingredients (Makes 8 slices)

For the base

  • 500 g pre-made pizza dough (e.g., Publix Ready Made or Pillsbury Pizza Crust)

  • 30 g I Can’t Believe It’s Not Butter (light)

  • 2 g sesame seeds

For the toppings

  • 450 g lean beef (sirloin, shaved steak, or ground beef)

  • 100 g sharp American cheese

  • 8 reduced-fat mozzarella string cheeses (e.g., Sargento Light)

  • 100 g skim mozzarella cheese

  • 150 g fat-free mozzarella cheese

For the sauce

  • 450 g fat-free cottage cheese

  • ¼ tsp onion powder (optional)

  • ¼ tsp garlic powder (optional)

  • Salt & pepper (to taste)

Instructions

1. Preheat oven

Preheat oven to 425°F (220°C). Lightly grease or line a large pizza pan or baking sheet.

2. Prepare the stuffed crust

Roll out the pizza dough into a large circle or rectangle.
Place the string cheese sticks around the edges of the dough. Fold the dough over and pinch tightly to seal, creating a stuffed crust.
Brush the outside of the crust with the light butter and sprinkle with sesame seeds.

3. Pre-bake the crust

Place the prepared crust in the oven and bake for 8 minutes. This crisps up the base while keeping the protein tender.

4. Make the sauce

Blend the cottage cheese in a food processor or blender until smooth.
Season with onion powder, garlic powder, salt, and pepper. Set aside.

5. Cook the beef

Heat a nonstick skillet over medium-high heat.
Cook the lean beef until fully browned. Season lightly with salt and pepper. Drain any excess fat if needed.

6. Assemble the pizza

Spread the blended cottage cheese sauce evenly over the pre-baked crust.
Layer on the cooked beef, then the sharp American cheese, and finally top with skim and fat-free mozzarella cheeses.

7. Bake again

Return the pizza to the oven and bake for 12–15 minutes, or until the crust is golden brown and the cheese is melted and bubbling.

8. Serve

Allow to cool for 5 minutes before slicing into 8 pieces. Serve hot and enjoy your high-protein cheesesteak pizza!
