Ingredients – Makes 6 Serves
For the Base
- 200g vanilla wafers
- 75g I cant believe its not butter
- 50g coconut flour (or flour of preference)
For the Filling
- 500 g Fat Free Ricotta Cheese
- 500 g Fat Free Cream Cheese
- 35 g Stevia Sweetener (Powdered)
- 1 tsp vanilla essence
- 25 g Gelatin (1 pack)
- 20 ml Lemon juice (or 1 tsp lemon essence)
- Salt pinch
For the Toppings
- 250g Fresh Raspberries (or Blackberries / Blueberries)

Instructions
Step 1.ย
Start by adding the biscuits to a food processor and blend until they resemble fine breadcrumbs. Next combine the biscuit crumbs, melted butter and sweetener in a mixing bowl and then transfer your heart shaped liners lined with parchment paper. (Note: you can use any sized or shaped dish you like, however the macros will change per serve). Using your hands, press the crumbs down in an even layer to form the heart shaped crust. Set aside.
Step 2.ย
Nest, in a large mixing bowl or food processor, beat/blend the cream cheese and ricotta cheese until smooth and creamy. Add in the sweetener and salt and mix well.ย
Step 3
Add in the vanilla essence, a squeeze of lemon and continue mixing until you have a creamy filling.ย
Step 4
Next, bring to the boil ~100ml of water, then transfer into a large measuring jug.
Gradually pour in the gelatin powder into the boiling water and whisk until completely dissolved. Transfer the gelatin mixture into the cheesecake mixture. Blend or mix for 10 -15 seconds or until well combined.ย
Step 5
Pour an even amount of the cheesecake filling on top of the individual crusts and smooth over using the back of a spoon until even. Refrigerate for at least 6 hours (overnight is best).ย ย
Step 6
Once the cake is set, remove from the refrigerator and garnish with toppings. Weโve used raspberries with a sprinkle of powdered sweetener to garnish, however you can serve with any toppings you like, including โฌ๏ธย ย
